Can I get by with only speaking English in Athens?

Greece is a predominantly english speaking country. Almost every millenia and a significant portion of baby boomers speak english. You will have no problem at all.

You've gotten a lot of great responses, so I'll just add that as someone who has lived in Athens for over 3 years (at different times) it certainly is doable, and I highly recommend it! I did learn some Greek of course, and the main obstacle I found is meetups/conferences where they'd sometimes speak Greek. In fact I then started an interpretation startup as a result of the frustration!

Due to economic crisis, the companies successfully overcome this issue by developing export departments,
so English and German are great assets whether you considering this option.

Regarding meetups, the major technical events (for instance data science etc) held in English.
