So, kinda depends on what you mean by "healthy" Quebec cuisine is often full of delicacies such as fois gras, cheese curds, lots of gravy -- sometimes all three of those things fried up in a savory doughnut (not kidding, on the menu at Joe Beef). Everywhere will have at least some fish & veggie options.
That said, here are some restaurants I would say are "hip":

Nouveau Palais
Le Chien Fumant
These are mostly Plateau/Mile End/Mile X, because that's where I'm at, but St Henri has a lot of new places too.
